In the world of winemaking, you can see it all, the good, the bad, and the ugly. However, the problem is that conventional products often force you to take the bad (additives) with the good (taste, possibly). This is simply unacceptable. The good news is that a breath of fresh air sweeps across the stale vineyards and cellars. Industrial winemaking is no longer the only game in town. Natural and organic winemakers are champions of the new global wave that is already shifting the whole ecosystem. They act as wardens and facilitators rather than trying to force the wine to fit a particular market-ready mold.
